How to Make Amritsari Kulcha

    Knead a soft dough with flour, curd, soda, salt and water; rest 2 hours.

    Mix the mashed potato with onion, chilli, coriander and spices for the filling.

    Stuff a dough ball, roll into an oval, and press coriander and nigella on top.

Tips for the Best Amritsari Kulcha

  • A very hot oven or open flame gives the signature charred blisters.
  • Press the toppings in firmly so they don't fall off while baking.
