Litti chokha is a classic Bihari dish where whole-wheat dough balls are stuffed with a spiced roasted-gram filling, baked until smoky, and served with chokha, a mash of roasted brinjal, tomato and potato. The filling is built on nutty, protein-rich Anveshan sattu and pungent Anveshan mustard oil for authentic depth, and each hot litti is drowned in melted Anveshan ghee. It is hearty, smoky and deeply satisfying.

Ingredients

  • Whole wheat flour
  • Anveshan Sattu

  • Ginger, garlic, green chillies

How to Make Litti Chokha

    Knead a stiff wheat dough and rest 20 minutes.

    Mix Anveshan sattu with ginger-garlic-chilli, ajwain, salt, coriander and Anveshan mustard oil.

    Fill the dough with the Anveshan sattu mixture, seal and shape into balls.
