Peel and dice the mango into small cubes.

In a pan, combine the mango and Anveshan Jaggery Powder and cook on medium heat until the Anveshan jaggery melts and the mango softens.

Add the cumin, red chilli powder, nigella seeds and salt; simmer 10–12 minutes until glossy and jammy.

- ✓Use firm ripe mangoes so the chutney has texture and doesn't turn to mush.
- ✓Cook on medium heat and stir often once the Anveshan Jaggery Powder melts, so it doesn't catch.
