  • Spinach, blanched and pureed
  • Onion, tomato, ginger-garlic
  • Cream (optional)
  • Garam masala and salt

How to Make Palak Corn

    Blanch and puree the spinach to keep it bright green.

    Heat the Anveshan Ghee and sauté onion, ginger-garlic and tomato with the spices until soft.

    Add the spinach puree and simmer briefly (don't overcook, to keep the colour).

Tips for the Best Palak Corn

  • Blanch and shock the spinach in ice water so the gravy stays vivid green.
  • Don't over-simmer once the puree goes in — it dulls the colour.
