Sabudana Vada

Sabudana vada is a popular Indian fasting snack of soaked sago pearls mixed with mashed potato, crushed peanuts and green chilli, shaped into patties and fried until golden. Frying in cold-pressed Anveshan groundnut oil gives them a crisp, clean crust while a little Anveshan bilona ghee enriches the mix. They take about 20 minutes to fry (plus soaking) and serve four as a vrat-friendly tea-time treat.

Ingredients

  • Sabudana (sago pearls)
  • Potatoes
  • Roasted peanuts (coarsely crushed)
  • Green chillies
  • Cumin seeds
  • Lemon juice
  • Rock salt (sendha namak)

How to Make Sabudana Vada

    Rinse and soak sabudana in just enough water for 4-5 hours until soft and fluffy, then drain well.

    Boil, peel and mash the potatoes, then combine with the soaked sabudana.

    Add crushed peanuts, chopped green chillies, cumin seeds, lemon juice and rock salt, then drizzle in 1 tbsp melted Anveshan Ghee and mix into a dough.

Tips for the Best Sabudana Vada

  • βœ“Soak the sabudana until a pearl mashes easily between your fingers for the right texture.
  • βœ“Add the coarsely crushed peanuts for crunch and to help bind the mixture.
