How to Make Ghevar

    Whisk the chilled Anveshan Ghee until creamy, then beat in the flour and enough chilled water to make a thin, pourable batter.

    Heat Anveshan ghee/oil in a deep, narrow pot; pour the batter in a thin stream into the centre so it spreads into a lattice disc.

    Cook until golden and set, then lift out carefully and drain.

Tips for the Best Ghevar

  • Everything cold — Anveshan ghee, water and batter — gives the crispest honeycomb.
  • Pour the batter in thin streams from a height, letting each layer set before the next.
