Dal tadka is a comforting yellow dal made from toor dal and finished with a sizzling tempering (tadka) of cumin, garlic and dried red chilli. Here the tadka is bloomed in rich Anveshan buffalo ghee instead of plain oil, with the dal first tempered in pungent Anveshan wood-pressed mustard oil. The richer buffalo ghee gives this dal a deep, dhaba-style aroma that ordinary refined oil simply cannot deliver.

How to Make Dal Tadka with Buffalo Ghee

    Pressure-cook the toor dal with turmeric, salt and 3 cups water until soft, then whisk smooth.

    Heat 1 tbsp Anveshan ghee, saute chopped onion until golden, add chopped tomato and cook to a soft masala.

    Stir the cooked dal into the masala, adjust consistency with hot water, and simmer for 5 minutes.
