Sabudana khichdi is a popular Indian fasting (vrat) dish of soaked tapioca pearls tossed with potato, roasted peanuts and cumin until light and fluffy. Cooking it in fragrant Anveshan desi ghee keeps the pearls separate and non-sticky while lending a rich aroma, with a little Anveshan groundnut oil for the tempering. Ready in about 30 minutes, it serves four and works for vrat days or a wholesome breakfast.

Ingredients

  • Sabudana (Tapioca Pearls)
  • Potato
  • Roasted Peanuts
  • Cumin Seeds
  • Green Chillies
  • Rock Salt (Sendha Namak)
  • Lemon Juice
  • Fresh Coriander

How to Make Sabudana Khichdi

    Rinse the sabudana well and soak in just enough water to cover, for 4-5 hours or overnight, until each pearl is soft.

    Coarsely crush the roasted peanuts and mix into the drained sabudana along with rock salt.

    Heat the Anveshan Groundnut Oil with the Desi Anveshan Ghee in a pan, splutter cumin seeds, add chopped green chillies and diced potato, and cook covered until the potato is tender.
